Pizza - Homemade
Apollo Pizza was my family's restaurant located on Dupont Street in Flint, Michigan
Apollo’s Pizza Sauce
- Small can 290 g ( 8 .oz) tomato puree or tomato sauce
- Less than ¼ can of water (or to your preference of thickness)
- 2 teaspoons Greek One Spice®
- Simmer ingredients until you reach a simmering boil. Remove from heat, cool
Bread maker Pizza Dough - Makes 2
- 1 ¼ cup water
- 3 tablespoons vegetable oil
- 2 teaspoon Greek One Spice®
- 1 teaspoon sugar
- 3 ¼ cups flour
- 2 ½ teaspoons yeast or instant package
Put the first 4 ingredients in bread pan. Add flour and then make a small pocket for the yeast. Make sure your pan is clean all around the edges before placing back into unit. Press the dough button. When dough rises (approximately 30 minutes after the beeps) punch it down and let it rise again. Before pulling out of pan sprinkle a little flour on your surface and on the dough. Divide into two and then pound the dough grabbing from side to side as you pound it onto the countertop until is shapes into dough balls, let sit for 30 minutes before using. If you use too soon your base will pull back and shrink from your pan.
Dough by hand
Put flour in a large bowl. Put the yeast in warm water, wait until it froths then add the salt, Greek One Spice and sugar to water. If using honey, melt and cool first then add to yeast water. Make a hole in the center of flour. Pour the water into the center a little at a time and begin to pull the flour towards to center. As the dough starts to get sticky, slowly add the oil. Continue this process until you have formed a ball. Now begin to knead by pulling and stretching the dough and folding it back onto itself until you have a smooth dough ball. Rest in an oiled bowl, cover with a damp tea towel put in a warm place, its ready when it doubles in size approximately 30 minutes. Then separate into two dough balls.
Assemble the Pizza
Oil two round or square pan and place the dough ball in the center let it rest for another 30 minutes then hand form the dough by pressing into the pan. Top with your favorite ingredients.

- Green capsicum (bell peppers)
Bake in a preheated oven
Turn your oven up as high as it will go on bake it should reach 500°. Bake your Pizza 10-12 minutes. When the crust snaps, it’s probably done!
To make your own minced sausage combine pork and steak mince fry it up in a pan and season with Greek One Spice® garlic, salt pepper and fennel seeds. Do not overcook as it will cook again in the oven. Drain any fat on paper towels and cool before use.
